vegan-muffins

This recipe makes 12 yummy muffins. The flour used can be interchangeable with your favourite gluten free flour. Using brown rice flour works very well too.

Ingredients

  • 1 1/2 cups chick pea flour
  • 1/2 cup brown rice flour
  • 1/2 tsp baking Soda
  • 1 tsp vanilla extract
  • ¼ cup raisins or chopped up dates (optional but yum)
  • 1/2 tsp salt
  • ¼ cup maple syrup
  • 1 cup unsweetened applesauce
  • 1 tsp cinnamon
  • ¼ tsp of nutmeg
  • ¼ tsp cloves or allspice
  • 1 tsp cinnamon
  • 3 ripe bananas

Directions:

  • Preheat oven to 350°F
  • Combine dry ingredients together in a bowl and do the same for the wet ingredients. Mash the bananas with the wet ingredients.
  • Add the wet and dry ingredients together
  • Pour into muffins cups
  • Bake for 20 minutes until tops are slightly browned
