vegan-pecan-muffins

This recipe makes 12 yummy muffins. These muffins are lightly spiced and fluffy. You can substitute the nuts in this recipe with your favourite. You can also replace the apricots! Simply use an equivalent amount of your favourite dried fruit. Raisins work very well too.

Ingredients

  • 1 cup rice flour
  • 1 cup chick pea flour
  • 1 tbsp baking powder
  • 3/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp salt
  • 1/4 cup oil
  • 1 1/4 cup brown sugar
  • 1 tsp flax seed
  • 1 tsp vanilla
  • 1 cup finely chopped dried apricots
  • 1/2 cup chopped pecan
  • 1 1/4 cup almond or soy milk

Directions:

  1. Preheat oven to 400 Fahrenheit (200 Celsius)
  2. Mix together all dry ingredients
  3. In another bowl mix wet ingredients together. Almond milk, oil, brown sugar and vanilla
  4. Add finely chopped apricots and chopped pecans
  5. Add both mixtures together and pour batter into muffin cups
  6. Bake for 15 to 20 minutes until nicely browned. Let cool for 3 mins on a rack

Additional Optional Ingredients:

  • grated lemon zest
  • candied nuts
