This recipe is easy, fast and fun! I called the recipe “happy time” because of the effect that raw cashew nuts have on our bodies. Two handfuls of cashew nuts a day have been shown to significantly fight depression and may work much better than prescription drugs for depression. Cashews are high in potassium, zinc, copper, iron, magnesium, and selenium. One may argue that this recipe is extremely high in fat and yes that is true, however it is a healthy “good” fat that your body needs to function properly. Regular consumption of these nuts has been shown to reduce body weight due to the body becoming satisfied by the fat and nutritions and curbing hunger.   • 1 cup raw, unsalted (organic) cashew nuts
  • 1/2 teaspoons of vanilla bean or vanilla extract
  • 1/4 cup of (organic) raisins
  • 2-4 tablespoons of raw cacao nibs

Additional Ingredients

  • Cinnamon
  • Other nuts


  1. Put all of your cashews into a food processor (even a coffee grinder works) and blend until it becomes a gooey paste.
  2. Add raisins and blend into the mixture so they are no longer whole.
  3. Remove mixture from blender. Knead the vanilla extract and cacao nib into the mixture.
  4. Roll mixture into tiny ball and form into circular cookies or whatever shape you prefer.
