vegan-pumpkin-spice-muffins

This is my favourite recipe of all time when it comes to vegan muffins. Very moist and delicious. I love to add a little extra molasses because I am that type of girl. This recipe makes 12 yummy muffins.

Ingredients

  • 1 1/4 cups rice flour
  • 1/2 cup chick pea flour
  • 1 tbsp baking powder
  • 2 tsp cinnamon
  • 3/4 tsp ginger powder
  • 1/4 tsp cloves
  • 1 tsp nutmeg
  • 3/4 tsp Salt
  • 3/4 cup vegan granulated sugar
  • 1/2 cup packed vegan dark brown sugar
  • 1 tsp vanilla
  • 1 cup pumpkin puree
  • 1/2 vegetable oil
  • 1/3 cup plain non-dairy milk (coconut, almond, rice)
  • 1/4 cup dark cooking molasses

Directions:

  1. Preheat oven to 400 Fahrenheit  (200 Celsius)
  2. Mix together spices, flour, salt
  3. In another bowl mix wet ingredients together. Almond milk, pumpkin, oil, molasses, brown sugar and vanilla. Stir until blended
  4. Add both mixtures together and pour batter into muffin cups.
  5.  Bake for 20 mins. Let cool for 3 mins on a rack.
