Low Fat Vegan Broccoli Soup

This low fat vegan broccoli soup is so delicious and creamy you would think it was fat laden and full of dairy. But surprise..!  It’s not, so you can trick your non vegan friends with this one (which is always fun to do). Anyway, in all seriousness, this is a great tasting, healthy, gluten free soup that is extremely nourishing and satisfying to the body. Broccoli is an extremely nutrient dense vegetable and has loads of iron, calcium, Vitamin A and Vitamin C. It is great for your eyesight, immune system, nervous and digestive system.

It has been known to also prevent cancer, help maintain a healthy body weight and for its anti-aging properties. It is also great source of folate forwomen during pregnancies and those taking birth control pills. This vegetable is available all year round, so you don’t have an excuse not to eat it. Some people have a hard time eating raw broccoli so having it in a blended soup is ideal.

Ingredients

  • 2 medium heads of broccoli with stalks (cut in florets)
  • 3 medium sized red or yellow potatoes (peeled and cubed)
  • 1 litre of vegetable broth
  • 1 tbsp basil
  • 1 ripe avocado (optional)
  • 2 tbsp nutritional yeast (more depending on taste)
  • water (to get to desired consistency)
  • salt and pepper to taste

Directions

  1. Place broccoli, potatoes, broth and basil in a large pot and bring to a boil. Once at a boil, simmer for 25-30 minutes till potatoes are tender.
  2. Add ripe avocado and nutritional yeast to soup.
  3. Take soup off heat  and use emulsion blender to blend all ingredients.
  4. Add more water to get to desired level of consistency.
  5. Let simmer for another 5-10 minutes.
