This is an amazingly tasty and easy low fat vegan soup that is super filling and delicious! It’s also a great winter soup that leaves you feeling all warm and fuzzy inside.  I try not to add additional oils to my recipes, they can be unnecessary in many cases and just add to the fat content without adding any more flavour. Here’s some stuff you may not know about sweet potatoes; they are extremely high in beta carotene, vitamin B6,  and are much more nutritional dense than your average white potato.  Interestingly, despite it’s sweet taste it has a low glycemic index and is a great option for diabetics as it does not increase blood sugar like white potatoes, rice and most flours.

  • 4-5 cups of sweet potato
  • 800 ml of vegetable broth
  • 2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/4 cup water
  • 5 cloves of garlic
  • 1 large yellow onion

  • Put the chopped up onion, garlic and spices in the pot with a bit of water and let simmer until onions are fully cooked
  • Add cut up sweet potatoes and broth and bring to a boil
  • Let cook for 35 minutes
  • Take soup and put in blender until it is smooth
  • Put back in pot and cook for another 10 to 15 minutes
