This is an amazingly versatile recipe. You can use this for raw pasta dishes, for dips, salad dressing and also for kale chips or other dehydrated veggies. It’s simple, nutritious and delicious. Please enjoy.


  • 3- 4 zucchini
  • 1 tsp onion powder
  • 4 – 5 sun-dried tomatoes
  • 1 tbsp nutritional yeast
  • 1 cup raw cashews
  • 1 tsp agave (optional)
  • 3/4 cup water or unsweetened coconut milk
  • 1/4 tsp lemon juice
  • 1/4 tsp parsley
  • 1/4 tsp basil
  • 2 garlic cloves
  • salt and pepper to taste

Additional Ingredients

  • Cayenne pepper for a kick


  1. Soak cashews in water for at least an hour then add into blender along with all the other ingredients expect the zucchini.
  2. Blend until a smooth consistency.
  3. Using a vegetable peeler or mandoline, peel zucchini into long shaped noodles.
