This recipe is very easy. Simply put all the ingredients below in a blender.  I hope you enjoy this raw vegan take on mint mousse. You can also make this into a mint chocolate by adding raw cacao powder.


  • 2 ripe avocados
  • 1/4 cup raw coconut
  • 4-5 mint leaves  or 1/4 teaspoon organic mint extract (optional)
  • 2 tsp raw cacao nibs (for a crunch)
  • 1-3 packets of powdered stevia or 3-4 tbsp maple or agave (until sweetened to taste)
  • 2- 3 tbsp coconut milk or water
  • 1/2 tbsp of spirulina (optional but yum)

Additional Optional Ingredients:

If you want to mix it up a bit try adding some or all of these ingredients

  • chopped mint leaves
  • macadamia nuts
  • coconut flakes
  • pine nuts
  • pistachio

Need it sweeter?

Some of us prefer our desserts a bit sweeter. You can try adding the following to sweeten this dessert more.

  • agave nectar
  • coconut sugar
  • maple syrup
