Start your breakfast off right! These chia seed pancakes are not only filling but they are also much healthier than your average pancake! You can add bananas or top with some vegan ice cream to sweeten it.


Dry Ingredients

  • 1 1/4 cup brown rice flour
  • 1/2 cup oat flour
  • 1/4 cup chia seeds
  • 3.5 teaspoons baking powder
  • 2.5 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp of salt

Wet Ingredients

  • 1 1/3 cup coconut milk or non diary
  • 1 tsp vanilla extract
  • 1.5 tbsp coconut oil


  1. mix wet and dry ingredients in two separate bowl, mix
  2. add wet and dry ingredients together
  3. let sit for 5 minutes and preheat pan
  4. lightly oil pan, heat on medium high
  5. cook until small bubbles form and flip and cook until lightly browned
