If you like raisins, you will like currants even more, well at least I do. They taste pretty much the same as raisins just smaller. This recipe is gluten free and makes for a lovely mid day treat!  Please enjoy.

Ingredients

  •  2 tbsp chia seeds
  • 2 tbsp water (extra if needed)
  • 1 1/2 tsp baking soda
  • 2 1/2 cups brown rice flour
  • 3/4 cup Earth Balance
  • 1 cup currants
  • 1/2 cup almond milk
  • 1 tbsp almond extract
  • 1/2 cup of chopped up almonds (optional)

Directions

  1. preheat oven to 425 F and spray cooking sheet
  2. add all ingredients together in a mixing bowl
  3. roll dough into a ball, press flat until its about an half an inch thick
  4. sprinkle with cinnamon and sugar
  5. cut into 10 pieces
  6. bake for 12 to 15 minutes
