This simple vegan matcha coconut pudding makes a great dessert or snack. It’s super simple to make and really packs in a lot of energy and nutrition. This treat is great for your immune system if you use fresh coconut, as well as for your hair and nails because of the healthy fats from the avocado. It also packs in a large amount of antioxidants and energy from the matcha powder. I’d say it’s a much better option than your average instant pudding. Bam!


  • 4  medjool dates
  • 1/3 cup raw fresh coconut
  • 1 ripe avocado
  • 1 tsp vanilla bean powder
  • 2-3 tsp matcha powder
  • 5 tbsp coconut milk


  1. Add all ingredients in a food processor, then pour into small bowls.
  2. Eat!
