Ingredients

  • 2 large portobella mushrooms
  • 3 tsp nutritional yeast
  • 2 1/2 tbsp dried basil
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne
  • sprinkle of salt
  • black pepper
  • 1/2 tsp paprika
  • 3 tsp balsamic vinegar
  • diced medium sized zucchini
  • 1 medium diced tomato
  • diced half red onion
  • 3 stalks green onions

Optional Extra Ingredients

  • 3 tsp chopped walnuts or other nut

Directions

  1. Preheat oven to 375 degrees Celsius.
  2. Dice zucchini, red onion, tomatoes and green onions and place in a mixing bowl.
  3. Add basil, garlic powder, cayenne, salt, black pepper and balsamic vinegar to ingredients above.
  4. Spray baking sheet or use parchment paper on a baking sheet.
  5. Place mushrooms on baking sheet and top mushrooms with filling.
  6. Top filled mushrooms with nutritional yeast.
  7. Bake for 20 minutes till top browns.
